Pellenzania chef Paco Lopez makes paella at the Soda City Market in Columbia, South Carolina on March 2. Lopez has worked at Pallenzania for seven years. “I love it because there’s just so much behind all of this. It’s not just cooking rice with meat and seafood, it’s a big community behind all of this; the people who grow the rice, the people who import it all the way to here.
